Black Bean Soup

Since the weather has finally gotten cooler around here, I am cooking a few different soups this week. Tonight I am serving Black Bean Soup

2 Tbsp. butter
1-2 onions, chopped
1 tsp. refrigerated chopped garlic
1 Tbsp. ground cumin
2 tsp. chili powder
3 cans black beans
3 cups chicken broth
2 Tbsp. lime juice
1.5 cups chunky salsa

Cook onion and garlic in butter until soft. Meanwhile, puree 2 cans of beans with a little bit of the chicken broth. Add this mixture plus all remaining ingredients to pot. Simmer for at least one hour. If you need to put this in the crock pot, I am sure it would be fine on low for a few hours.

Serve the soup over tortilla chips with grated cheese on top.

Whenever I try a new recipe like this, I also make some macaroni and cheese. That way if some of my little children do not care for it (after they have tried it of course) they can just eat the mac and cheese on their plate. I do not serve something else if someone doesn't like supper, but if it is something new, or something really too spicy for the little ones, I include something else on the menu for them. That way they don't think they are getting a special or different meal because they didn't like what was prepared. They just eat what they really like.....after trying the new item!

  1. We love black bean soup at our house. This recipe looks yummy. I usually serve brown rice at each meal. We use it much like you use the mac n' cheese. That and as filler for my bigger growing children.

    I am so impressed that you guys actually had the energy to run a
    5K after RYC! (I have to admit that I was envious of Lynn's hat on Friday morning, but I thought you both looked pretty good considering! I mean, I "slept" in your bunkhouse too & avoided every camera on Friday morning!)

    Your kids are so nice! I have a hilarious picture of Olivia dissecting owl pellets - I'll have to figure out how to send it to you! Nice meeting you! We are off to violin, soccer games, and our gospel meeting! Hope your day is blessed! :-)

    This sounds yummy and we must be on the same wavelength! I just decided to feature a 5 star soup recipe each week that I made and give my review and alterations/suggestions on! Haven't picked the day yet, but I'll let you know. I really prefer making soups with whole foods and as little processed stuff as possible. We will give this one a try, too!! Thanks, sweetie!!
