Recipes

This is the delicious chocolate icing I used for Clay's birthday cake last Friday. I am making another one for our family. We are celebrating his actual birthday this Friday.

Chocolate Icing
1 stick butter
4 Tbs. cocoa
1/3 cup milk
4 cups powdered sugar.

Melt butter over low heat in a saucepan. Stir in cocoa and milk. Bring to a boil, then remove from heat. Add sugar and beat with a hand mixer until smooth. Spread over a 9 x 13 cake, or you can use it for cupcakes. I also chopped Reesee cups on top!

Homemade Macaroni and Cheese
1 8oz bag macaroni, cooked
1/2 stick butter
1/4 cup flour
About 2 or 2 1/2 cups of milk
1 8 oz. block cheddar cheese, shredded
salt to taste, probably about 1 tsp.

While macaroni is cooking, melt butter in saucepan. Stir in flour, stirring constantly. Gradually add milk. Whisk constantly....I just add milk until I think it's about right. Remove from heat and stir in cheese until melted. Add salt. Pour the cheese sauce over the drained macaroni. Stir and taste to see if it needs more salt.

    Logan's birthday was this past Sunday - the 21st. He was 17. The years have surely flown!!

    I have recently ordered 'Educating the wholehearted child', saw you enjoy a couple of her books.
