A Few Recipes

Here are some recipes for my frequently featured suppers.

Shrimp Scampi

1 lb. shrimp (I get a bag at Sam's that is already peeled and deveined)

16 oz. angel hair pasta

1/3 cup butter

1/3 cup olive oil

1 tsp. jarred chopped garlic

garlic salt to taste

Cook pasta. In large skillet, heat butter, olive oil, and garlic. Add shrimp (thawed) and saute until pink. If the shrimp is already cooked, just heat it through. Add garlic salt to taste.

Pour shrimp and sauce over drained pasta. Serve.

Fruit Salad
1 can peach pie filling
1 can oranges, drained
1 can pineapple chunks, drained
1 can tropical fruit, drained
2 bananas, sliced
1 container frozen strawberries, thawed

Mix all ingredients in a large bowl. Enjoy!

Pasta Salad
1 lb. pasta, cooked and drained
1 bunch broccoli, chopped
carrots, sliced
8 oz. cheese, cubed
1 pint cherry tomatoes, halved
1 pkg. Good Seasons Italian dressing mix, mixed according to package directions.

After cooling pasta, add veggies and cheese. Salt to taste. Toss with mixed dressing. Serve.
