Banana Applesauce Muffins

1 1/4 cups all-purpose flour (I used organic whole wheat pastry flour)
1 1/2 cups quick-cooking oatmeal
1/3 cup sugar
1 tsp. baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt

Mix all of these dry ingredients in a large bowl.

1 banana mashed
applesauce (added to mashed banana to make 1 cup total)
1 egg
1/3 cup brown sugar
1/3 cup milk
1/4 cup vegetable oil
1 tsp. vanilla

Mix all of these ingredients in a separate bowl. Add the liquid ingredients to the dry ones and mix until just blended.
Spoon into paper lined muffin tins.
Makes 12 muffins.
Bake at 350 for 18 minutes.

These muffins freeze well, and the recipe doubles easily.
