Mint Chocolate Bars

This recipe is doubled and slightly modified from a recipe called No Bake Peppermint Patty Bar found  on Oh, She Glows website.

4 cups old fashioned oats, ground into flour using a food processor
2 cups nuts (walnuts, almonds, pecans, etc.) ground finely in the food processor

Put the oats in a bowl while grinding the nuts.  Add oat flour back to the food processor after grinding the nuts.

Add the following to the nuts and oat flour in the processor:

1/2 cup cocoa
1 tsp. salt
1/4 cup brown sugar

Pulse until mixed.  Then add:

1/2 cup maple syrup
1/4 almond milk

Mix until the mixture comes together.  It may take 30 seconds to 1 minute.

Spread into a 9 x 13 baking dish. I use waxed paper and press down with my hands.

Melt 1 bag of chocolate chips with 1/2 tsp. of peppermint extract and spread over the bars.  Place dish in freezer for 10 minutes.  Then cut the bars and wrap them individually in plastic wrap.
