Menu Monday
Here's the menu:
Saturday: pasta salad, guacamole and chips (Family Bible Study)
Sunday: refried beans with homemade tortillas
Monday: stir fry vegetables and brown rice
Tuesday: tabbouleh and sweet potato rounds (didn't have this last week)
Wednesday: gnocchi with spaghetti sauce, salad
Thursday: vegetable soup, cornbread
Friday: homemade pizza

Pita Bread
I used the recipe found at this link. However, only one of my pita breads rose enough to be split. They all tasted delicious, but I could not split them so they could be stuffed. So, the next time I bake these I plan to 1--double or triple the recipe and 2--shape the pitas and let them rise first. Instead of letting the blob of dough rise one hour, shape into pita rounds, let rise a little bit more, and then bake. I think that shaping them as soon as I mix and knead the dough, and then letting them rise for 45 minutes or so will work better. I'll let you know as soon as I try it!
