This recipe is doubled and slightly modified from a recipe called No Bake Peppermint Patty Bar found on Oh, She Glows website.
4 cups old fashioned oats, ground into flour using a food processor
2 cups nuts (walnuts, almonds, pecans, etc.) ground finely in the food processor
Put the oats in a bowl while grinding the nuts. Add oat flour back to the food processor after grinding the nuts.
Add the following to the nuts and oat flour in the processor:
1/2 cup cocoa
1 tsp. salt
1/4 cup brown sugar
Pulse until mixed. Then add:
1/2 cup maple syrup
1/4 almond milk
Mix until the mixture comes together. It may take 30 seconds to 1 minute.
Spread into a 9 x 13 baking dish. I use waxed paper and press down with my hands.
Melt 1 bag of chocolate chips with 1/2 tsp. of peppermint extract and spread over the bars. Place dish in freezer for 10 minutes. Then cut the bars and wrap them individually in plastic wrap.

Hello! These mint bars sound absolutely wonderful. And easy!!
So happy to see you're running and feeling so good. I pop in from time to time but don't always leave a comment. Sorry, I really try not to do that.
Since I had a few minutes tonight I wanted to pop in and say HI.
*hello* :-)
Thank you for sharing this recipe.....we love mint candies here!
