Menu Plan Monday


Here is this week's menu. I am going to include the recipes for Tortellini Soup and Chocolate Cobbler. Both were delicious---I cooked them over the weekend.

Baked Fish, Roasted Potatoes, Peas
Tortellini Soup, Grilled Cheese Sandwiches
Grilled Chicken, Baked Sweet Potatoes, Roasted Asparagus
Shrimp Scampi, Salad
Little Cheesy Meatloaves (from the freezer), Mashed Potatoes, Peas
Grilled Chicken (again), Salad, Rolls
Tortellini Soup
1 9oz. package frozen cheese tortellini
1 can Italian diced tomatoes
4 Cups chicken broth (I used 2 cans and added water to make 4 cups)
1 1/2 tsp. dried basil
1 can white kidney or cannelloni beans
Bring broth to boil. Add tortellini and simmer for 4-5 minutes. Add remaining ingredients and simmer another 10 minutes or so.
Very easy! Very tasty!
Chocolate Cobbler
2 sticks butter
1 1/2 cup self-rising flour
1 1/2 cup sugar
3/4 cup milk
1 tsp. vanilla
6T. cocoa
1 cup sugar
1 cup warm water
Preheat oven to 350. Melt the butter in the bottom of a 9 x 13 pan. In a mixing bowl combine flour, 1 1/2 cups sugar, milk and vanilla. Pour over butter. In a separate bowl, mix 1 cup sugar and cocoa. Spinkle over mixture in the dish. Gently pour the warm water over the top. Do not stir. Bake for 45 minutes.
Very fattening! Very tasty!

  4. My friend, Tonya, makes each member of our family a chocolate cobbler for our birthdays! What a treat! I've tried it several times, but mine are never as good as hers. You've inspired me to try again!

  5. I needed some dessert that was easy, tasty and quick as I was expecting some company yesterday. I tried this chocolate cobbler recipe. It was so good. I served it warm with vanilla ice cream on top. Everyone loved it. Thank you.
