Menu Plan Monday

I am still trying to cook and serve healthy meals around here. My Sue Gregg cookbooks are invaluable!

We pretty much eat the same things for breakfast, lunch, and snacks.
Breakfast: cereal (some sort of cheerios or Fiber One), peanut butter and jelly, Clif granola bars
Lunch: leftovers, flour tortilla roll-ups, fresh fruit
Snacks: popcorn, pretzels, cheese nips, almonds, animal crackers, fresh fruit

Suppers for this week:
  • Sauteed squash, peppers, and onions, served with tomatoes over brown rice
  • baked chicken strips, oven fries, green beans, black-eyed peas
  • chicken strip salad
  • pork tenderloin, mashed potatoes, crunchy romaine salad
  • vegetable soup, grilled cheese sandwiches

  2. Hi Roan! Are the Sue Gregg Cookbooks very involved or would you consider them fairly quick and easy? Long on ingredients?
