It's been a while since I have shared my menu, but we have still been eating! Here is this week's menu: nothing fancy, but most of it is relatively healthy. Sam requested chicken and rice casserole, and it is NOT low calorie or low fat! But is does taste good, and I have not made it in months! We eat homemade bread with most of our meals.
- pasta salad, fruit salad
- baked fish, brown rice, green salad
- shrimp fajitas, frozen pink fruit salad
- stuffed bell peppers, strawberry congealed salad, corn
- baked chicken strips, brown rice, green salad
- chicken and rice casserole, black eyed peas
- spaghetti with homemade sauce

My mom makes a chicken and rice casserole that is pretty healthy. I'm experimenting with different recipes this month that will work well with having company over and this one is near the top of my list. This week on Wednesday I'm cooking for the church. We usually have 50-60 turn out. I'm making Smockity Frock's cavatini recipe. Not healthy, at all, but tasty.

Im glad you mentioned brown rice. I have some in the pantry that I forgot about :)
ReplyDeleteI made the bread last Saturday. It was a fairly easy process. I forgot to half so the dough was too much for the kitchen aid. We moved it out of the bowl and I just kneaded the rest of the way. I baked in the oven. It made 4 large loaves. We gave one away and now only have one left. We have loved it! Thanks for the recipe.
